Ingredients

  • 1 cup Nuts, pistachio nuts, raw chopped
  • 1/2 cup packed Brown Sugar dark
  • 1/4 cup Lime Juice, Fresh (equal to 3 tbsp)
  • 1 1/2 tsp Dill Weed, dried
  • 1 1/2 tsp Fresh Black Pepper
  • 24 oz Fish, salmon, pink, raw (Six 4 oz fillets)

Directions

  1. Preheat oven to 425 degrees F.
  2. Place the salmon in a 9x13 sprayed baking dish. (Usually I rinse the fillets first.)
  3. Pat salmon fillets with paper towel to remove any excess water.
  4. Combine the rest of the ingredients in a small bowl. Spoon over the salmon.
  5. Bake in oven for 12-15 minutes, or until the fish is done. Don't overcook the salmon. Use the back of a spatula to press down on the salmon to feel if it's cooked. If the spongy feeling is gone, and the salmon is firm, then it is cooked!
  6. Remove from the oven immediately and serve.
