- Preheat oven to 375 degrees F.
- Grease or line with parchment paper an 8x8-inch baking dish.
- In a small bowl: mix the plant milk + vinegar. Let sit for 5 minutes.
- In a large bowl, whisk together dry ingredients: cornmeal, flour, flaxseed, baking powder, baking soda, and salt.
- In another bowl, combine the applesauce, oil, maple syrup and milk mixture.
- Pour wet ingredients into dry ingredients, add the fresh corn and stir gently just until combined. Do not overmix. Optionally, add green chilies for a Southwestern flavor.
- Pour batter evenly in prepared dish. Bake for 22–25 minutes, or until golden and a toothpick comes out clean.
- Cool slightly before slicing. Serve warm.
