Arugula, Strawberry, Almond, and Ricotta Salad

Ingredients

  •  cup Arugula
  • 1/2 cup, sliced Strawberries
  • 1/4 cup, sliced Almonds , roasted unsalted
  • 1/4 cup Ricotta cheese, lower fat
  • 1 tablespoon Fresh Lemon Juice
  • 1/2 tbsp Honey
  • 2 tablespoon Extra Virgin Olive Oil

Directions

  1. Mix the lemon juice and honey in a small bowl with a whisk.
  2. Add the olive oil while continuing to whisk. Set aside.
  3. Toss the arugula, strawberries and almonds in a large bowl with the dressing.
  4. Divide into 2 serving bowls and garnish with the ricotta cheese.
